Snow Kiss Mochi /Mike Lim

It was a sweltering afternoon when I happened to catch a glimpse of a Strawberry Daifuku on the menu. 

Intrigued by its delicate appearance, I stepped into this charming Japanese dessert shop nearby, not quite knowing that I was about to discover one of the most refreshing little treats of the day.

After scanning the menu, the Snow Kiss Mochi immediately caught my eye. I simply could not resist ordering it.

Inspired by the classic Japanese Strawberry Daifuku, Snow Kiss Mochi takes the familiar idea and gives it a wonderfully contemporary twist.

The outer layer is a classic white mochi skin, soft, tender and pleasantly chewy, with that satisfying stretchiness characteristic of Japanese glutinous rice dough. 

A delicate dusting of starch keeps it from sticking to the fingers while adding to its understated, traditional character.

But the real surprise is what lies within: a cool, tangy Yuzu Sorbet wrapped around a whole fresh strawberry.

The yuzu sorbet is an inspired choice. Japanese yuzu is prized for its intensely fragrant citrus aroma and naturally bright sweet-and-sour character. 

In sorbet form, its clean acidity and icy freshness cut beautifully through the sweetness and richness of the mochi. The result is remarkably refreshing, especially on this hot afternoon.

Then comes the strawberry — fresh, juicy and naturally sweet. As it meets the fragrant tartness of the yuzu, the two flavours unfold together in the mouth, creating a beautiful double-layered sweet-and-sour experience. The combination is simple, yet remarkably well balanced.

Traditional Strawberry Daifuku is usually filled with red bean paste or white bean paste, giving it a distinctly sweeter and more substantial profile. Replacing the traditional bean filling with Yuzu Sorbet is a clever modern interpretation. The vibrant citrus aroma and gentle acidity of yuzu not only lighten the dessert and cleanse the palate, but also introduce a wonderfully cool, almost crystalline texture.

What I particularly enjoyed is how this dessert manages to respect the soul of a traditional Japanese confection while reimagining it with a distinctly modern sensibility.

Soft mochi, icy yuzu, and a juicy whole strawberry — three textures and three expressions of sweetness and acidity coming together in one elegant bite.

A delightful little discovery, and a beautiful example of how Japanese dessert-making can remain rooted in tradition while continuing to evolve.
